Tooke flour is made from Uganda's highland cooking bananas, known locally as matooke. These are green, unripe bananas — not the sweet dessert variety. They are organically grown by smallholder farmers in the Greater Ankole region of Uganda and processed at our pilot plant in Bushenyi.

Raw Tooke Flour (RTF) is our uncooked flour, ideal for baking bread, cakes, chapattis, and for use as a thickening agent. Instant Tooke Flour (ITF) is pre-cooked through a specialised thermal process, making it ready to mix directly with hot water or milk for porridge, baby food, or nutritional shakes — no cooking required.

No. Because our flour is made from unripe, green cooking bananas, it has a neutral flavour profile. It will not make your baked goods taste like bananas. The true flavours of your recipes come through, making it a straightforward wheat-flour substitute.

Yes. Raw Tooke Flour is designed as a direct substitute for wheat flour in baking. It provides excellent crumb structure, retains moisture beautifully, and works well for bread, cakes, muffins, biscuits, and flatbreads such as chapattis.

Yes, 100%. Tooke flour is naturally and completely gluten-free. Our dedicated manufacturing facility processes only bananas, with zero risk of cross-contamination. It is safe for people with Celiac disease and gluten sensitivities.

Resistant starch is a type of carbohydrate that resists digestion in the small intestine and ferments in the large intestine. Green highland bananas are rich in it. This means Tooke flour helps slow the release of glucose into the bloodstream (supporting blood sugar management and weight control) and acts as a prebiotic, feeding the beneficial bacteria in your gut for better digestive health.

Instant Tooke Flour is an excellent choice for infant weaning and young children. It is pre-cooked, gentle on the stomach, highly digestible, and free from all artificial additives. Always consult your paediatrician when introducing new foods to infants.

No. Tooke is a clean-label product containing zero artificial preservatives, colours, or flavours. What you get is 100% pure banana flour — nothing more, nothing less.

Tooke products have been globally tested and certified by the Uganda National Bureau of Standards (UNBS), Halal, and ISO. FDA approval is currently underway.

Fresh matooke bananas are processed at our semi-automated Pilot Plant in Nyaruzinga, Bushenyi District. The plant uses German drum-drying machinery that removes moisture gently, keeping the starches, vitamins and minerals in the fruit. Processing lines are entirely enclosed and automated, minimising human contact to ensure absolute food hygiene.

We source all our matooke exclusively from organised Community Processing Units (CPUs) — local farmer cooperatives in the Greater Ankole region of Uganda. We buy directly from these cooperatives, bypassing middlemen and ensuring farmers receive a fair, premium price.

Yes. Our partner farmers cultivate their matooke using generations-old organic farming practices. They rely on the natural fertility of Uganda's volcanic soils, utilising mulching and organic composting rather than chemical fertilisers or pesticides.

Every purchase directly supports Uganda's peasant farmers. Before Tooke, up to 40% of their harvest would rot due to the perishability of fresh matooke. Through our Community Processing Units, farmers now have a guaranteed market at premium prices. We also provide training in modern farming techniques that have helped raise yields from about 10 toward 70 metric tonnes per hectare.
